Not only are avocados a superfood, but they are also a paleo staple. Packed full of good fats they are a wonderful addition to a paleo diet. Better yet, they are also delicious. This breakfast is so easy to make you will be wondering why you didn’t try it sooner. Simply crack and egg into half and avocado, bake, and viola…breakfast!
Eggs Baked in Avocado
- 1 Avocado (ripe)
- 2 Eggs
- dash Smoked paprika
Preheat oven to 400 degrees F.
Cut the avocado in half and remove the pit.
Scoop out enough of the center of each avocado half so an egg will fit.
Place the avocado halves face up on a baking tray.
Crack an egg into each half.
Bake in the oven for 15-20 minutes, until the egg sets.
Remove from the oven, sprinkle with a little smoked paprika and serve.
