These coconut creamed cucumbers are the easiest appetizer or snack. We get a lot of questions about snacks – and understandbly so. There are so many options out there that it can be overwhelming to know what is best to eat.
There are few things I look for when picking a snack – am I getting some sort of nutrition from it? Vitamins, minerals, fiber?
If I can incorporate veggies into it – even better. I think we can all agree that we all need to eat more vegetables. And veggie-filled snacks are an easy way to up our intake.
Is it going to keep my blood sugar stable? I want some sort of healthy fat or protein involved.
And that’s about it. It’s nothing special but it’s super effective! And these coconut creamed cucumbers meet the criteria for me!
The coconut milk adds healthy fats and the cucumbers give me that boost of nutrition. Win win!
Coconut Creamed Cucumbers
Ingredients
- 2 cucumbers sliced
- 1/2 cup coconut milk
- 1 teaspoon lemon juice
- 1 teaspoon fresh ground black pepper
- 1 teaspoon fresh chopped dill
- Sea salt to taste
Instructions

Combine all of the ingredients in a large bowl. Let stand at room temperature for 20 minutes or so to develop the flavors. Serve at room temperature or chilled.
