A healthy and flavorful dressing makes the perfect meal that will taste delicious, but won’t weigh you down.
Christmas Kale Salad
Ingredients
Salad
- 8 cups baby kale or other mixed greens
- 2 cups roasted squash or sweet potatoes
- 2 small apples cored and sliced
- 1/2 cup Pomegranate seeds
- 1 1/2 pounds cooked and sliced beef such as Prime Rib or London Broil
Dressing
- 1/2 cup Extra virgin olive oil
- Juice of 1 orange
- 2 tsp Cider vinegar
- 1 tsp Dijon mustard
- 1 tsp Raw honey
- 1/8 tsp Ground cloves
- Sea salt and fresh ground pepper to taste
Instructions

Toss all of the salad ingredients in large bowl.

To make the dressing, put all of the ingredients in a jar and shake until well combined. Toss with the salad before serving.
