Christmas Kale Salad

Ingredients

Salad

  • 8 cups baby kale or other mixed greens
  • 2 cups roasted squash or sweet potatoes
  • 2 small apples cored and sliced
  • 1/2 cup Pomegranate seeds
  • 1 1/2 pounds cooked and sliced beef such as Prime Rib or London Broil

Dressing

  • 1/2 cup Extra virgin olive oil
  • Juice of 1 orange
  • 2 tsp Cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Raw honey
  • 1/8 tsp Ground cloves
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Toss all of the salad ingredients in large bowl. 
  2. To make the dressing, put all of the ingredients in a jar and shake until well combined. Toss with the salad before serving.
