Christmas Kale Salad
Ingredients
Salad

baby kale
or other mixed greens

roasted squash or sweet potatoes

small apples
cored and sliced

Pomegranate seeds

cooked and sliced beef
such as Prime Rib or London Broil
Dressing
1/2
cup
Extra virgin olive oil
Juice of 1 orange

tsp
Cider vinegar

tsp
Dijon mustard

tsp
Raw honey
1/8
tsp
Ground cloves
Sea salt and fresh ground pepper
to taste
Instructions
Toss all of the salad ingredients in large bowl.
To make the dressing, put all of the ingredients in a jar and shake until well combined. Toss with the salad before serving.
