MAPLE. PUMPKIN. MEATBALLS. Yes, you read that right. Talk about the ultimate fall dinner recipe. Tender, sweet, and savory, these meatballs taste like fall. They are a great choice for those nights when the weather cools down and you want something hot and toasty, but aren’t quite ready for soup or stew. The combination of pumpkin and maple syrup really gives these meatballs a distinctly autumn flavor. The pureed pumpkin also ensures that these meatballs stay moist and tender. Eat them by themselves, paired with some veggies, or on top of some cauliflower rice. However you do it, I promise that you’ll love every ...

Roasted Fall Vegetables Turkey Salad

October 1, 2017 By Joel Runyon Leave a Comment

A few weeks ago, we posted a recipe for simple roasted fall vegetables. This recipe is taking that idea up a notch. You'll want to save this recipe for the day after Thanksgiving for an amazing way to use all of that leftover turkey.  How easy is this recipe? Super. You'll roast the vegetables in the same way as our previous recipe- toss your favorites (we suggest the ones below, but feel free to include your own) in olive oil and roast them in the oven until they become caramelized and delicious.  Don't stop there though. You'll whip up an easy dressing with superfoods including apple cider vinegar, olive oil, ...

Roasted Fall Vegetables

September 10, 2017 By Joel Runyon Leave a Comment

gluten-free

After a summer of raw vegetable salads, you need a little heat in your life. Roasting vegetables gives them new life, and when combined with crunchy pecans and tart cranberries, the results are life changing. Fall vegetables are especially delicious. When roasted in the oven, they get crunchy, sweet, and their contrasting flavors perfectly complement each other. Topping these nutrient-powerhouses off with a couple tablespoons of thyme really takes the recipe up a notch. Thyme has long been a staple in traditional medicine practices. The powerful herb has been shown to be supportive of immune and respiratory systems. It’s especially ...

Greek Chicken and Veggie Skewers

August 27, 2017 By Joel Runyon Leave a Comment

greek chicken and veggie skewers

This Greek chicken and veggies skewers recipe is one that will please many palates at your next summer barbecue. With simple ingredients and minimal prep time, you can spend less time grilling and more time soaking up the sun with your guests. A note about homemade marinades - many people are intimidated to make their own marinades, and would rather opt for a store bought version. If I have learned one thing while following the Paleo diet, though, it’s that making your own is so much better. Not only is the taste improved, but you control the quality of every single ingredient that goes into it. When you make your own, you dictate the ...

Topping this delicious chicken on top of a simple salad takes the meal to a whole new level. If you  have hesitant veggie eaters in your family, convince them to give this salad a shot. They won’t be ...

June 25, 2017 By Joel Runyon Leave a Comment

For many people, the grill signals the start of summer. The days are sun-filled and the nights are warm and long. There's nothing better than inviting some friends over and sharing laughs over a delicious meal. Kick off the grill season appropriately with this recipe for citrus grilled shrimp. It's a true crowd-pleaser.  This dish is not only delicious, but it’s so easy too. The tanginess of the lemon and lime is taken up a notch with a touch of ...

Baby Green Salad with Fruit

June 18, 2017 By Joel Runyon Leave a Comment

While adding fruit on salad can seem weird at first, it truly is such a delicious combination. Lots of summertime fruits are tasty on salads, but this one focuses on using seasonal cherries and blueberries. On top of fresh baby greens and paired with creamy goat cheese (omit this if you’re sticking to strict Paleo), the fruit is really the star of this recipe. The salad dressing for this salad is delicious as well. Many people buy salad dressings at home, but a lot of brands have sketchy ingredients. You have to read the ingredient labels closely to avoid this. Skip the hassle and make your own at home. This dressing can be ...

Shrimp Zoodles with Basil

June 11, 2017 By Joel Runyon 1 Comment

If you’re a pasta junkie, and have yet to try zoodles, you'll want to pay attention.  What are zoodles? Quite simply, they are zucchini noodles.  The zucchini can be grated, spiralized, or ribboned to look like pasta noodles. You can use any of the following tools: mandolin slicer, food processor, julienne peeler, or a spiralizer device.  You can get one of these spiraling tools at most stores or online. You don’t have to do much prep to transform the zucchini to zoodles. Be sure to wash the vegetable and the cut the ends off so you have two flat surfaces on the end. There is no need to peel the skin. Zucchini ...

Chicken and Vegetable Bowl

May 28, 2017 By Joel Runyon Leave a Comment

When you’re looking for a dinner or lunch that comes together quickly, this one is it. Use leftover or rotisserie chicken to whip this up even faster. Served warm or cold, it’s a filling, healthy meal you can count on when you need it the most.  Not only is this meal simple, but you’re basically eating a rainbow in a bowl. Why is that important? The colors of fruits and vegetables can tell you a lot about the vitamins and minerals contained inside. When you “eat the rainbow,” meaning you have a bunch of different colors on your plate, it’s an easy way to know that you’re getting a good micronutrient boost. Phytochemicals are ...
