Citrus and shrimp make a wonderful flavor combination. The tanginess of the lemon and lime is taken up a notch with a touch of sweetness from the honey. For best results, let the marinade sit on the shrimp for 15-30 minutes to get the most of the flavor.
This recipe can be served as an appetizer, paired with a colorful salad, or eaten on top of cauliflower rice.
Citrus Grilled Shrimp
Ingredients
- 1/2 cup olive oil
- Juice and zest of 1 lime
- Juice and zest of 1 lemon
- 1 teaspoon raw honey
- 1/2 teaspoon ground coriander
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 pound Raw shrimp peeled and deveined
- 4 cups mixed cubed vegetables of your choice: squash zucchini, bell peppers, onions, etc.
Instructions

Whisk the oil, lime, lemon, honey, coriander, salt, and pepper in a large bowl until well combined. Add the shrimp and veggies to the bowl and toss to coat.

Thread the shrimp and vegetables onto skewers.

Preheat a gas or charcoal grill to medium high heat. Grill until shrimp turn pink and vegetables are charred.
