
Banana Nut Bread

Ingredients
- 3/4 c Coconut flour
- 1/4 c Arrowroot powder
- 1/2 c Almond flour
- 2 tsp Cinnamon
- 2 tsp Baking soda
- 1/4 tsp Sea salt
- 1/2 c Chopped pecans
- 1/2 c Raisins
- 2 Ripe bananas (medium)
- 3 Eggs
- 1/2 c Coconut milk
- 1 1/2 c Unsweetened apple sauce
- 1 tsp Vanilla
- 1/2 c Mixed nuts (for top)
Instructions

Preheat oven to 350 degrees.

Line a 9 x 5 inch bread pan with parchment paper. You’ll be glad you did.

Combine all dry ingredients in a mixing bowl, and stir well with a fork.

Put all wet ingredients into a bowl, and mix well. A hand mixer works best for this with the bananas. You might also want to break the bananas into pieces instead of adding them to the bowl whole.

Combine both wet and dry ingredients, and mix well using a hand mixer. The batter will be dense.

Pour batter into 9 x 5 bread pan, and sprinkle the top with mixed nuts.

Bake for 60-70 minutes, or until a toothpick comes out clean.

Toast, and serve topped with almond butter.

Yes this recipe is one of my current favorites! There is lots of good energy in one little slice of this and is super easy to eat on the go with a bit of almond butter! Please let me know how it turns out for you when you try it. Keep in mind that the batter for this is dense so you’ll want to watch it closely as it bakes since all ovens are a little different.

I wouldn’t recommend eating this banana bread daily if you are trying to lose weight. It has a fair amount of nuts and bananas are high glycemic. If you’re trying to lose weight on Paleo it is best to limit your fruit and nut intake. Stick mostly with meats, vegetables, and healthy fats. Fruits, nuts, and seeds can be consumed in moderation. This would be a good treat to enjoy occasionally.
