Zucchini Hashed Browns
- 1 zucchini grated
- 1 egg
- 2 green onions diced
- 2 tablespoons olive oil
- Sea salt and fresh ground pepper to taste
Combine the zucchini and the egg in a bowl with the green onions.
Heat the oil in a skillet and fry spoonfuls of the zucchini until crisp. Serve hot.
