To prepare the Paleo ZAB Soup, you have to heat oil on high first. Then, add the diced onion and sauté until tender (3 to 4 minutes). Next, chop garlic and add to pot, then turn heat to medium-low for 5 minute. Then, add the sliced Zucchini to the pot. Add in lemon juice and pinch of salt.Bring pot contents to a simmer over high-heat, cover, turn heat down to low, and simmer 5 minutes. After that, stir contents and cook for another 10 minutes (or until zucchini is tender) . Next to that, pour the soup into a blender or large food processor, and add the fresh basil and arugula directly into the blender (be cautious not to overfill the blending device and always cover the top with a kitchen towel). Lastly, Garnish with chopped basil and hot sauce.

- 2 cups Vegetable stock
- 1 pinch Salt
- 1 cup Fresh basil leaves (packed)
- 1 cup Arugula (packed)
- 1 Lemon (juiced)
Instructions
