Note: If you can’t find coconut cream, you can refrigerate a can of coconut milk overnight. Without shaking, open it up and remove the solid coconut cream from the top.

These quick and easy veggie fritters are crispy and flavorful. They make a nice side for grilled meats.

Ingredients
Fritters:
- 1 summer squash shredded
- 1 zucchini shredded
- 1 carrot shredded
- 1/2 cup finely shredded cabbage
- 1 egg
- 1/2 cup almond flour
- 1/2 cup coconut milk
- 1/2 teaspoon sea salt
- 2 tablespoons olive oil
Chive Coconut Cream:
- 1/2 cup coconut cream
- 1/2 teaspoon sea salt
- 1 teaspoon minced chives
Instructions

Combine all of the ingredients for the fritters except the oil in a large bowl and mix well.

Heat the oil in heavy bottomed skillet. Drop the veggie mixture by large spoonfuls into the hot oil and fry until golden on both sides.

To make the coconut cream, whisk the cream, salt, and chives in a small bowl. Serve with the fritters.
