To make this Sweet Potato Soup with Bacon, you just have to put the sweet potatoes, chicken stock, cinnamon, nutmeg, and ginger into the slow cooker. In a low heat, cook it for 6 hours. Add the coconut milk and use your immersion blender to blend until creamy.
Simple to make in the slow cooker, your house will be filled with fresh aroma all day long. This could also be made in a stock pot on the stove if you don’t want to use the slow cooker.

Ingredients
- 2 lbs Sweet potatoes (peeled and roughly chopped)
- 2 cups Chicken stock
- 1 tbsp Ground cinnamon
- 1 tbsp Ground nutmeg
- 1 tsp Ground ginger
- 1/2 cup Coconut milk
- 4 slices bacon (cooked crisply and diced)
Instructions

Add the sweet potatoes, chicken stock, cinnamon, nutmeg, and ginger to the slow cooker.
