If you’re anything like me, you love a good, filling, savory breakfast. And this one hits just the spot.
Almost always, when prescribing nutrition advice to people, my number one piece of advice is this – veggies with every meal. That’s when the question comes up – how do I eat veggies for breakfast?
There are definitely ways to do it. Smoothies are one of my favorite. But this recipe does it too. Combining greens, like kale, with protein and fat-rich foods can make even the most ardent veggie hater find them tasty.
Besides sneaking veggies onto your breakfast plate, this recipe is great because it is so easy. In less than 20 minutes, you have such a filling, nutrient-dense meal that will keep you fueled until lunch.

Steak, Eggs, and Kale
- 2 tablespoons olive oil
- 2 cups chopped kale
- 4 ounces grass fed beef diced
- 1 egg
- Sea salt and fresh ground pepper to taste
Heat the oil in a heavy skillet and add the kale. Cook until wilted and soft. Add the beef and cook until done to your liking.
Remove both from the pan and fry the egg until done to your liking. Serve immediately.
