What’s better than starting your day with a something hearty and delicious? This Southwest turkey hash is just that. And eating a serving of this will kick your day off with an impressive amount of protein.
Hashes, like this one, are great when you need something satisfying but you have a bunch of seemingly random ingredients. Have some veggies in your fridge that you need to use asap? Make a hash. Have a few potatoes that are nearing their end date? Make a hash. Add in some protein and spices, throw some eggs on top and you’ve got yourself an impressive, and simple, meal.
With chili powder, oregano, and cumin, this hash is built upon on southwestern flavors. But I promise it’s not too spicy or overwhelming – and you can always alter the amounts you put in if you’re concerned about that.
This hash uses bell pepper and onion but you could throw so many other vegetables in as well. Spinach would be a nice, easy addition. Asparagus, maybe. Whatever your little vegetable-loving heart desires.
You’ll start by putting some oil into your skillet – add in the onion, peppers, and sweet potatoes. And cook it until softened – I’d encourage you to stir occasionally just to avoid things from sticking to the pan. You’ll want to put the seasonings on once those vegetables start to soften down.
Next, crumble the ground turkey into the pan with the vegetables and cook until done.
Once your turkey is cooked, use your spatula to make four holes in the hash. This is where you’re going to crack your eggs. Cook those eggs until they reach your desired doneness and that’s it.

Southwest Turkey Hash
Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 1 bell pepper diced
- 1 sweet potato peeled and diced
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- 1/2 pound ground turkey
- 4 eggs
- Sea salt and fresh ground pepper to taste
Instructions

Heat the oil over medium high heat. Add the onion, pepper, and sweet potatoes. Cook until veggies are softened. Add the seasonings and cook for another minute.

Add the turkey to the pan and stir and cook until turkey is cooked through.

Using a spatula, form 4 small holes in the hash and crack the eggs inside. Cook until eggs are done to your liking and serve.
