Short ribs may intimidate you if you’ve never made them, but they couldn’t be more easy if you have a slow cooker.
It takes all day, but the end result is tender, melt in your mouth beef that you simply can’t get enough of. Serve these with mashed cauliflower for the most comforting experience.
Just throw it in the slow cooker before you go to work. When you come home, you’ll have delicious, tender short ribs that will make your mouth water.
What I love about this keto-friendly recipe is that it uses nutritious, real-food ingredients. You can be keto and eat nothing but steak and cheese, but you won’t get the full benefits of the keto diet as you would if you are eating a varied diet.
Slow Cooker Short Ribs
Ingredients
- 2 pounds bone in beef short ribs
- 4 tablespoons olive oil
- 1 onion sliced
- 1 small carrot sliced
- 4 cups beef broth
- 2 cloves garlic smashed
- 2 sprigs thyme
- Sea salt and fresh ground pepper to taste
Instructions

Season the short ribs with salt and pepper. Heat a heavy, deep skillet over medium high heat. Add the short ribs and cook until well browned, then transfer to the slow cooker.

Add the onions and carrot to the skillet and cook until softened; add these to the slow cooker as well. Add the remaining ingredients and then cover and cook on low heat for approximately 8 hours, until beef is tender. Serve with mashed cauliflower or other side of your choice.
