Porridge, with its thickness and warmth, is a great way to start a cold morning, so, if the winter weather is still lingering in your part of the world, do yourself a favor and whip yourself up some healthy porridge.
Calories 638 kcal
- 4 Eggs
- 2 tbsp Coconut flour
- 1/2 c Raisins
- 1/2 c Coconut milk
- 1 pinch Salt
- Seasoning of choice (cinnamon, pumpkin pie spice, vanilla, etc.)
Whisk four eggs in a small bowl.
Once whisked, add coconut flour, coconut milk, and salt. Mix well.
Once combined, bring to medium heat (do not boil) in a small sauce pan, stirring constantly.
The porridge will begin to thicken. Stir until desired consistency is reached.
Garish with seasonings, banana slices, fresh fruit, additional coconut milk, Paleo Granola*, or Crock-Pot Fig Apple Butter**.
