Cauliflower tabouli is simple, fresh, super healthy, and absolutely delicious!
Tabbouleh or Tabouli is a delicious staple in Middle Eastern cultures, traditionally made of tomatoes, finely chopped parsley, mint, onion, seasoned with olive oil, lemon juice, and salt but most recipes feature bulgur wheat.
And since adding bulgur of wheat in the recipe is not Paleo, we made this easy, quick, healthy, and paleo-friendly tabouli by replacing wheat with cauliflower. As we all know, cauliflower is one of the most healthiest food you can eat out there. It is an excellent source of vitamin C, and a very good source of manganese. It also helps fight cancer, boost heart and brain health, supports detoxification and digestion, and is rich in vitamins and minerals.
To make this dish, simply chop and mix the cauliflower and garlic. Add the remaining ingredients and mix until well combined. Just that and you already made yourself a healthy snack in less than 15 minutes.

Paleo Cauliflower Tabouli
Ingredients
- 1/2 head Cauliflower
- 1 clove garlic
- 1 small bunch Parsley (finely chopped)
- 1 tbsp Chopped mint (finely chopped)
- 2 tbsp olive oil
- 1 large Tomato (diced)
- 1 Lemon (juiced)
- Sea salt and fresh ground pepper (to tase)
Instructions

Put the cauliflower in a food processor with the garlic. Chop until cauliflower is finely chopped.

Transfer to a bowl and add the remaining ingredients. Mix until well combined. Chill until ready to serve.
