Paleo Breakfast Muffins

Ingredients
- 6 Eggs (room temp)
- 6 tbsp Coconut oil (melted)
- Powdered Stevia (to taste)
- 1 tsp Vanilla extract
- 1/4 tsp Sea salt
- 1 tsp Baking powder
- 1/2 c Coconut flour
- 1/2 c Frozen fruit (raspberries were used in this recipe)
Instructions

Preheat oven to 400 degrees.

Blend all ingredients except frozen fruit. Mix well.

Once ingredients are mixed together well, fold in the frozen fruit.

Pour batter into muffin cups, and bake for 15 minutes or until a toothpick comes out clean.
Recipe Notes
If you use eggs straight from the fridge they will turn your coconut oil into a solid, and the ingredients won’t mix well.
Feel free to substitute 1/2 c (either paleo-approved or not) chocolate chips if you’re looking for a treat.
These freeze well. I’d keep a large batch on hand to grab and go!
