Tender lamb chunks are simmered with lots of veggies for a hearty, healthy meal that is perfect for when you want something comforting, but different.
Feel free to substitute in your favorite veggies in place of the veggies listed below. This stew is super versatile. Eat it for dinner and take the leftovers for lunch the next day!
Lamb Veggie Stew

Ingredients
- 2 tablespoons olive oil
- 1 Onion sliced
- 1 Carrot sliced
- 1 Zucchini sliced
- 1 Green pepper sliced
- 1 teaspoon Italian seasoning
- 1 pound lamb cubed
- 4 cups Chicken broth
- fresh chopped parsley for serving
Instructions

Heat the oil in a large soup pot. Add the vegetables and cook until softened. Add the Italian seasoning, and the lamb and cook until lamb is browned. Stir in the broth and bring to a boil.

Reduce heat and simmer until lamb is tender. Serve topped with the chopped parsley.
