The keto diet is booming in popularity right now. There are many reasons why this could be the case, but I think part of the reason is because people have seen huge success following it.
Weight loss, of course, is a benefit of this diet regime. But many people also report increased mental clarity and energy.
People also like that there is a little more flexibility in the diet than compared to paleo or AIP. This recipe might just show you why.
If you miss the comfort of a loaded baked potato, this low carb version is sure to be a big hit.
It’s got all the ingredients to hit the right notes: butter, cheese, bacon, chives, and sour cream. The only thing missing is the potato, but since that’s the most boring part anyway, cauliflower makes an excellent substitute.
Enjoy this with a juicy steak and asparagus for a steakhouse meal you don’t have to feel guilty about.

Loaded Cauliflower Casserole
- 1 head of cauliflower cut into florets
- 1/2 cup sour cream
- 3 tablespoons butter
- 1 cup shredded cheddar cheese
- 3 slices bacon cooked and crumbled
- 3 tablespoons minced chives or sliced green onions
- Sea salt and fresh ground pepper to taste
Preheat oven to 375 degrees F.
Put the cauliflower in a microwave safe bowl with a few tablespoons of water. Cover and cook for 5-6 minutes, until cauliflower is tender. Remove, drain, and let stand for about 5 minutes.
Transfer to a food processor and process until fluffy and smooth. Add the sour cream and butter and continue pulsing until smooth. Transfer to bowl and fold in half the cheese, bacon, and half the chives.
Transfer to a casserole dish and sprinkle with the remaining cheese. Bake for 10 minutes, or until bubbly. Top with reserved chives and serve.
