This Italian Sausage and Peppers recipe will be a life saver for the nights when you have no idea what to make for dinner. It’s incredibly flavorful but also simple to make.
The red onion will caramelize nicely and add a nice sweetness to the flavor that really compliments the sausage. If you’re a garlic lover, add a clove or two of minced garlic and sauté for about 2-3 minutes before you want to serve. Be careful because if you over cook the garlic, it will get bitter, so it’s important to add it at the end. Enjoy!

Ingredients
- 4 Italian sausages fully cooked, or chicken sausage
- 2 Bell peppers any color, sliced into strips
- 1 Red onion sliced
- 1 tbsp Coconut oil or avocado oil
- Fresh parsley optional
- Sea salt and black pepper to taste
Instructions

Heat the cooking oil over medium high heat in a large skillet.

Add the sausages. Cook for 4-6 minutes, turning frequently so it browns evenly.

Move the sausages to the sides of the skillet and add the peppers and onions.

Sauté the peppers and onions until soft and slightly caramelized.

Transfer the sausages to a cutting board and slice on the diagonal. About 4-5 slices per sausage.

Transfer the peppers and onions to a serving plate. Top with sausage.

Season with sea salt and black pepper, to taste. Garnish with fresh parsley.
