You want the vegetable to be delicious enough to stand on its own two feet, while at the same time accentuating the flavors of your main dish. These honey ginger glazed carrots do just that! They are sweet, salty, and have some zing. They are also simple to prepare and sure to be a hit with you family and guests alike. Give this showstopper side dish a try and you will never look at vegetables the same way again!
Honey Ginger Carrots

Ingredients
- 1 lb Carrots
- 1/4 cup olive oil
- 1/4 cup Honey
- 3 tbsp Coconut aminos
- 1/4 tsp Sea salt
- 1 inch fresh ginger (grated)
- 1 tbsp Sesame seeds
Instructions

Preheat oven to 400 degrees F.

Peel the carrots and cut them in half lengthwise. Place them in the bottom of a baking dish and set aside.

In a small bowl, whisk together the olive oil, honey, coconut aminos, sea salt and fresh ginger. Pour the mixture over the carrots, covering evenly.

Bake in the oven for 30-40 minutes, or until the carrots are tender.

Remove from the oven, sprinkle with sesame seeds and serve.
