Granola is very easy to make at home and when you make it yourself, you get to choose the exact ingredients that go into it. This sweet, grain-free honey and apricot granola can be enjoyed with almond milk as a morning cereal or eaten as an afternoon snack. Granola is full of healthy protein and fats to help fuel you through the day.

How To Make Paleo Granola
Grain-Free Honey And Apricot Granola
Ingredients
- 1 cup Almonds
- 1/2 cup Macadamia nuts
- 1/3 cup Unsweetened coconut flakes
- 1/4 cup Pumpkin seeds (shelled)
- 1/4 cup Coconut oil
- 3 tbsp Honey
- 1 tsp Vanilla extract
- 1/3 cup Apricots (dried, finely diced)
- 1/2 tsp Salt
Instructions

Preheat the oven to 300 degrees F.

Line a baking sheet with parchment paper.

Place the almonds, macadamia nuts, coconut flakes, and pumpkin seeds into a blender and pulse a few times to make smaller pieces.

Add the coconut oil, honey, and vanilla to a microwave-safe bowl.

Heat in the microwave for 45 seconds.

Remove from the microwave and stir in the nut mixture, tossing well to thoroughly coat.

Stir in the apricots and salt.

Spread the granola onto the prepared baking sheet in an even layer and bake for 20 minutes or until lightly browned.

Allow to cool for 10 minutes before breaking into large pieces.

Store in a Ziploc bag or resealable container.
