Cauliflower rice is a popular paleo side dish that goes well with a large variety of entrées. To rice the cauliflower, you can either chop it up in a food processor or grate it by hand.
We’ve added garlic and plenty of fresh herbs to this recipe to improve the taste of the cauliflower rice. Parsley is listed but any combination of your favorite fresh herbs will do. Serve the rice alongside a stir-fry, a curry, or even some steak.

To try this recipe, you may start by Placing the cauliflower into a food processor and pulse until reduced to the size of rice grains. After that, Heat the olive oil in a nonstick skillet over medium heat then add the onion and sauté for 4-5 minutes until soft. Add the garlic to the pan and sauté for 1-2 minutes more then stir in the cauliflower and season with salt and pepper. After that, add the water to the pan and cover. Cook for 7-10 minutes until the cauliflower has softened, stirring occasionally. Then remove from heat and fold in the fresh parsley. Serve warm, with lime as garnish.

- 1/2 yellow onion (large, diced)
- 4 cloves garlic (minced)
- Salt and freshly ground pepper (to taste)
- 1 tbsp Water
- 1/4 cup Fresh parsley (chopped)
- 1 Lime (for serving)
