Do you ever have those days when you miss orange chicken? Oh, I know I have. It was a go-to of mine back in my college Chinese takeout days.
Nowadays, I’ve gotten a lot pickier with what I order through takeout – and the orange chicken from Chinese restaurants doesn’t quite make the cut for me.
That’s why we had to get a healthy alternative on the site for you all.
Chicken thighs are cooked until golden brown and then flavored with oranges in this easy and delicious recipe.
Served with a hearty side of spinach, it’s filling and healthy, and will surely land on your dinner rotation.
Crispy Orange Chicken Thighs with Sautéed Spinach
- 1 pound chicken thighs
- 2 tablespoons olive oil
- 1/2 orange sliced
- 2 sprigs rosemary
- 2 cloves garlic minced
- 6 cups chopped spinach
- Sea salt and fresh ground pepper to taste
Preheat oven to 375 degrees F.
Heat a heavy, deep skillet over medium high heat. Season the chicken thighs with salt and pepper and sear skin side down until golden brown. Flip and top each thigh with an orange slice. Transfer to oven and cook until chicken reaches 165 degrees F.
When done, remove from oven, and set on stovetop. Remove chicken from the pan and allow to rest. Heat the same skillet over medium heat and add the garlic. Cook for a minute, add the spinach and cook until wilted. Serve the chicken with the spinach on the side.
