Once the weather turns cold, I start craving soups. This creamy sweet potato and apple version hits the spot. The combination of sweet potato and apple may seem a bit weird at first, but I promise it pays off with major flavor.
This creamy soup is the perfect combination of sweet and tart, thanks to the chopped apples that are added with the veggies. Tart apples will balance out the sweetness of the potatoes, but a sweet one can be good as well.
Creamy Sweet Potato and Apple Soup

Ingredients
- 3 tablespoons olive oil
- 1 Onion diced
- 1 clove garlic minced
- 1 Apple cored and grated
- 2 large sweet potatoes peeled and cubed
- 1 teaspoon Thyme
- 5 cups Chicken broth
- 1 cup Coconut milk
- Sea salt and fresh ground pepper to taste
Instructions

Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and apples, and cook until softened. Add the potatoes and thyme, and stir.

Add the broth and bring to a boil. Reduce heat to a simmer, and simmer for 20 minutes, or until potatoes are softened.

Transfer to a blender and blend until smooth. Add back to the pot, add the coconut milk, and heat over low heat until hot throughout. Serve hot.
