The eggs in these pancakes ensure that you get some protein. And, as a bonus, there’s no added sugar in this recipe. The only sweetness comes from the sugar in the ripened bananas.
The sweetness from the bananas is complemented nicely by the ginger, cinnamon, and cloves – a classic Christmas taste combination.

Christmas Morning Ginger Pancakes
- 4 Eggs
- 4 ripened bananas
- 3 tablespoons Coconut flour
- 1 teaspoon powdered ginger
- 1 teaspoon Cinnamon
- 1/2 teaspoon Ground cloves
- Coconut oil for cooking
Combine all of the ingredients in a bowl and mix well.
Heat a skillet or griddle over medium heat and add coconut oil.
Spoon the batter onto the surface and cook until bubbly.
Flip, cook until browned. Serve warm.
