Hopefully you know this now, but in case you don’t…I’m here to tell you – salads don’t have to be bland and boring! This chopped chicken salad with a satisfying and flavorful sesame almond dressing is a prime example.
This salad also comes in clutch when you have a craving for some classic Asian flavors. But your local Chinese takeout joint probably doesn’t offer the healthiest choices. As good as lo mein sounds, we can all agree that the quality of ingredients usually isn’t that high.
So whip this up and satisfy all your cravings. Without sacrificing quality. .
First off, you’ll want to make your dressing. This is made with sesame oil, almond butter (I’d advise to use a creamy version vs crunchy), ginger, garlic, orange juice and zest, red pepper flakes, and paleo-friendly fish sauce.
Pro tip: check your local Asian grocery store for fish sauce – or the Asian foods aisle at your market. Chances are they’ll have it there. We like the brand Red Boat.
Put all of those ingredients into a bowl and whisk it up until smooth. Give it a little taste test to see if it matches your preferences. You may like it a little sweeter or tangier depending – so always do a taste test before moving on. That’s good advice in general 🙂
Once your taste buds approve, you’ll put the cabbage, carrots, green onions, orange pieces, chicken breast, and sliced almonds into the same bowl with the dressing. Toss all that around to ensure it gets mixed evenly.
And there you have it. A delicious salad with huge flavor. And it comes together in a flash. It doesn’t get much better than that.
Enjoy!
