Paleo Breakfast Muffins
6 Eggs ((room temp))6 tbsp Coconut oil ((melted))Powdered Stevia ((to taste))1 tsp Vanilla extract1/4 tsp Sea salt1 tsp Baking powder1/2 c Coconut flour1/2 c Frozen fruit ((raspberries were used in this recipe))
Preheat oven to 400 degrees.Blend all ingredients except frozen fruit. Mix well.Once ingredients are mixed together well, fold in the frozen fruit.Pour batter into muffin cups, and bake for 15 minutes or until a toothpick comes out clean.
If you use eggs straight from the fridge they will turn your coconut oil into a solid, and the ingredients won’t mix well.
