Mexican Watermelon Salad

Watermelon was made for hot summers. It's perfect for picnics and snatched moments in the shade. But here at the Ultimate Paleo Guide, we like to take things to the next level, which is why we've created the Mexican Watermelon Salad. This salad is just as refreshing as plain old watermelon but it packs a punch, thanks to the spices. A treat for the tastebuds!  Mexican Watermelon Salad 4 c Watermelon ((cubed))2 c Jicama ((cubed))Juice from 1 lime1/4 c Cilantro ((fresh chopped))A dash of ancho chili powder ((and/or cayenne- optional)) Cube both watermelon and jicama and add to a large serving bowl.Using a hand juicer, ...

Tangy Watermelon Cooler

This wonderful juice makes summer fun and festive! Add it to your next get-together to really make an impression. It would also be great with some salt and a splash of tequila, if you get my meaning… Enjoy! Tangy Watermelon Cooler 4 c Water1/2 c Hibiscus ((dried))4 c Fresh watermelon juice1/2 c Lime juice ((fresh squeezed))Sweetener of choice ((to taste)) Put 4 c water on the stove and bring to a boil.Once boiling, turn off heat, and steep 1/2 c dried hibiscus for about 5 minutes.Strain hibiscus leaves from the pot, throw away, and set tea aside to cool.Chop up watermelon, remove rind, and add flesh to juicer (seeds and ...
