Thankfully, this salad combines sweet fruit with savory vegetables and comes together quickly in a skillet. Serve it warm or cook it the night before and eat it chilled for a delicious, healthy breakfast.
Sweet and Savory Breakfast Salad
- 3 tablespoons toasted sesame oil
- 1 cup pineapple chunks
- 1 red bell pepper diced
- Juice of 1 lime
Heat the oil in heavy skillet over medium heat. Add the pineapple and peppers, and cook until lightly browned and soft. Add the lime juice and transfer to a bowl. Serve warm.
