Savory Italian Crepes
A few simple ingredients make crepes that are Paleo-friendly, easy to prepare, and delicious. A savory Italian filling makes a perfect breakfast fit for a king.

- 4 eggs
- 2 tablespoons coconut flour
- 1 tablespoon olive oil
- 1/2 cup water
- 1/2 teaspoon sea salt
- Olive oil for cooking
- 2 tablespoons olive oil
- 1 cup cooked and diced chicken
- 1/2 cup roasted tomatoes
- 1 teaspoon Italian seasoning
- 1 tablespoon capers
First make the crepe batter by combining the eggs, coconut flour, olive oil, water, and salt in a blender. Blend, on low, until well combined. Let stand for five minutes.
To prepare the filling, combine the ingredients in a bowl and mix well.
Heat a tablespoon of olive oil in a 8-inch, non-stick skillet over medium low heat. Pour about 3-4 tablespoons of batter into the pan and let it spread to the edge of your pan. Cook until bubbly, then carefully flip. Continue cooking for about a minute, and then transfer to a plate. Continue cooking until batter is gone.
Fill each crepe with the filling and serve warm.
