Cooking with a crock pot is so simple. Just throw the ingredients into the pot, set the cooking level (I almost always use “low”), and then wait. Sometimes the waiting is the hardest part, especially with this delicious version of paleo pot roast. The pineapple does not over power with sweetness and if you like ginger, don’t be afraid to increase the amount listed below. The long cooking time makes all of the flavors subtle and the meat finishes pull-apart-tender and juicy. Yum.
Pineapple Ginger Paleo Pot Roast

Ingredients
- 3 lbs Pot roast
- 20 oz can Pineapple in pineapple juice
- 1 yellow onion (chopped)
- 4 cloves garlic (minced)
- 1/2 tbs fresh ginger (minced)
- Salt and pepper ( to taste)
Instructions

Shake salt and pepper on the pot roast as desired. Place pot roast in crock pot.

Add onion, garlic, and ginger. Pour the can of pineapple with juice into the crock pot.

Cover and cook on low for 8 hours.

Remove pot roast and slice for serving. Actually, it should be more like “pull apart” for serving. Serve with sweet potatoes or vegetable of choice.
