Few meals say “comfort food” like beef stew. And if you skip the potatoes, and serve with a side salad of mixed greens, you’ll have a great meal that doesn’t pack on the pounds, while still giving you that belly full of comfort that feels so good especially in the chilly fall and winter months. This is a bare bones basic version of beef stew, so feel free to experiment with other vegetables such as green beans (my favorite addition), broccoli, cauliflower, or (gasp) potatoes.
Basic Beef Stew
Calories 729 kcal
Ingredients
- 2 lbs Stew beef
- 2 cups Beef broth
- 1 tbs Balsamic vinegar
- 1 yellow onion (chopped)
- 1 Stalk of celery (chopped)
- 2 Carrots (large, chopped)
- 4 cloves garlic (minced)
- 1 tbs Chili powder
- 1/2 tbs Paprika
- 1 tsp Cayenne pepper
- 1 tsp Basil (dried)
- 1 tsp Oregano (dried)
- 1 tsp Rosemary (dried)
- 3 Bay leaves
Instructions

Place the stew beef into a slow cooker.

Pour the broth over the stew beef. Add all other ingredients to the Crock-Pot.

Set the Crock-Pot on low, and cook for 8 − 10 hours. Serve with a side salad of mixed greens and your favorite homemade salad dressing.
