You’ll want to save this recipe for your next meal prep day. Make these up at night, pop ‘em in the fridge, and in the morning you’ll have a healthy breakfast in just a few minutes, with no mess. Do Ahead Breakfast Cups
- 4 slices bacon
- 4 eggs
- 1/2 cup sliced onions
- 1/2 cup sliced mushrooms
- Sea salt and fresh ground pepper to taste
Preheat the oven to 350 degree F.
Line the inside of ramekins or small jars with the bacon. Crack an egg into each one and top with the onions and mushrooms. Season with salt and pepper.
At this point, you can either cover them with plastic wrap and refrigerate until ready to serve or bake immediately.
Bake in a 350 degree oven for 10 minutes, or until egg is set. Serve warm.
