Paleo Cauliflower Tabouli

  • 1/2 head Cauliflower
  • 1 clove garlic
  • 1 small bunch Parsley (finely chopped)
  • 1 tbsp Chopped mint (finely chopped)
  • 2 tbsp olive oil
  • 1 large Tomato (diced)
  • 1 Lemon (juiced)
  • Sea salt and fresh ground pepper (to tase)


  1. Put the cauliflower in a food processor with the garlic. Chop until cauliflower is finely chopped.
  2. Transfer to a bowl and add the remaining ingredients. Mix until well combined. Chill until ready to serve.
