Crunchy Plantain Chips

Ingredients

  • 2 Green plantains
  • Juice from 1 lime (about 1 tbsp)
  • 1 tbsp Coconut oil
  • Sprinkle of garlic powder
  • Sea salt (to taste)

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and slice plantains as thinly as possible (be very careful) using a mandolin or a sharp knife. Slice them either lengthwise or round.
  3. Add plantain slices to a parchment-covered baking sheet.
  4. Drizzle with coconut oil and lime juice. Sprinkle with seasonings and salt to taste.
  5. Bake for 20-25 minutes, flipping halfway through.
  6. Eat immediately with Paleo Chocolate Chili or store in an airtight container to keep them crisp.

Recipe Notes

Note: it is quite important that these plantains are green. Too much yellow will make them difficult to cut because they won’t be firm enough to slice with a mandolin. Too mushy and you run the risk of having to deal with stitches!
