Put the cauliflower in a microwave safe bowl with a few tablespoons of water. Cover and cook for 5-6 minutes, until cauliflower is tender. Remove, drain, and let stand for about 5 minutes.
Transfer to a food processor and process until fluffy and smooth. Add the sour cream and butter and continue pulsing until smooth. Transfer to bowl and fold in half the cheese, bacon, and half the chives.
Transfer to a casserole dish and sprinkle with the remaining cheese. Bake for 10 minutes, or until bubbly. Top with reserved chives and serve.
