Keto Blueberry Waffles

Ingredients

  • 2 tablespoons coconut oil
  • 1 cup water
  • 1/2 cup almond flour
  • 3 tablespoons coconut flour
  • 1 tablespoon ground psyllium husk
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 3 eggs beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoon baking powder
  • 1/4 cup fresh blueberries

Instructions

  1. Put the coconut oil and water in a medium saucepan and bring to a boil. Reduce to a simmer. Add the almond flour, coconut flour, psyllium husk, xanthan gum, and salt and stir. Cook until it begins to pull away from the pan and form a ball. Turn off heat.
  2. Transfer ball to a mixing bowl, and let cool for 10 minutes. Beat in the eggs one at a time and then add the vanilla and baking soda. Beat until well combined. Fold in the blueberries.
  3. Cook the batter in your waffle iron according to your manufacturers instructions. You’ll probably need to cook them a bit longer than usual to get crispy, well browned waffles.
  4. Serve with grass-fed butter, additional fruit, and a favorite sugar-free syrup if you have one.

Recipe Notes

Note: this does not make a batter similar to traditional waffles, it will be more like a thick dough, so don’t be alarmed if it doesn’t seem right.
