Italian Beef Soup

This flavorful soup comes together in a flash. It’s healthy, comforting, and perfect for a cold winter day when you want dinner fast.

  • 1.5 pounds grass-fed ground beef
  • 1 onion sliced
  • 2 cloves garlic chopped
  • 1 head kale or bunch spinach chopped
  • 1 teaspoon Italian seasoning
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots sliced
  • Juice of 1 lemon
  • Sea salt and fresh ground pepper to taste


  1. Using your sauté setting, cook the beef until no longer pink in the center. Remove the beef and add the onions and garlic. Cook for 2 minutes.
  2. Add the remaining ingredients to the pot, and close the lid. Set timer to 5 minutes at high pressure and cook.
  3. Serve immediately.
