Banana Nut Bread

Ingredients

  • 3/4 c Coconut flour
  • 1/4 c Arrowroot powder
  • 1/2 c Almond flour
  • 2 tsp Cinnamon
  • 2 tsp Baking soda
  • 1/4 tsp Sea salt
  • 1/2 c Chopped pecans
  • 1/2 c Raisins
  • 2 Ripe bananas (medium)
  • 3 Eggs
  • 1/2 c Coconut milk
  • 1 1/2 c Unsweetened apple sauce
  • 1 tsp Vanilla
  • 1/2 c Mixed nuts (for top)

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a 9 x 5 inch bread pan with parchment paper. You’ll be glad you did.
  3. Combine all dry ingredients in a mixing bowl, and stir well with a fork.
  4. Put all wet ingredients into a bowl, and mix well. A hand mixer works best for this with the bananas. You might also want to break the bananas into pieces instead of adding them to the bowl whole.
  5. Combine both wet and dry ingredients, and mix well using a hand mixer. The batter will be dense.
  6. Pour batter into 9 x 5 bread pan, and sprinkle the top with mixed nuts.
  7. Bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Toast, and serve topped with almond butter.
