Pineapple Cucumber Salsa

  • 2 c Pineapple (finely diced)
  • 1 c ucumber (for less water remove the seeds before dicing)
  • Juice from 2 limes about 2 tbsp
  • 1/3 c fresh chopped cilantro
  • 1/3 c fresh chopped green onion
  • Sea salt and pepper to taste
  • Fresh chopped jalapeño or habanero seeds and stems removed (optional, for a little kick)


  1. Dice pineapple and cucumber and place in a mixing bowl. Due to the nature of cucumbers, the finished product will contain a fair amount of juice. If you want to limit the amount of water in the salsa, remove the seeds from the cucumber, using a spoon, before dicing.
  2. Add diced cilantro, green onion, and lime juice. Stir to combine.
  3. If adding hot peppers, add them now and taste test to determine whether or not you’ll add sea salt or pepper.
