Paleo Apple Muffins

Ingredients

  • 6 Eggs
  • 1 tsp Ground Cinnamon
  • 1/8 tsp Ground Nutmeg
  • 1/4 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1/2 cup Coconut Oil (melted)
  • 1/4 cup Honey
  • 1/2 tsp Vanilla Extract
  • 1 cup Fuji Apples (peeled, cored and cut into chunks)
  • 1/2 cup Coconut Flour

Instructions

  1. Preheat oven to 350 degrees F. Line a muffin tin with 9 cupcake liners.
  2. In a large bowl whisk together the coconut flour, ground cinnamon, ground nutmeg, baking soda and salt.
  3. In another mixing bowl whisk together the eggs, coconut oil, honey and vanilla extract. Add the wet ingredients to they dry. Mix with a wooden spoon until ingredients are well combined and a smooth batter forms. Fold in the apple chunks.
  4. Spoon the batter into the muffin tin, dividing equally between the 9 cupcake liners.
  5. Bake in the oven for 35-40 minutes, until a toothpick comes out clean.
  6. Remove from the muffin tin and cool on a wire rack.
