Jumpin’ Jumbalaya

Ingredients

  • 1 lb Boneless skinless chicken breast (cut into cubes)
  • 1 lb Andouille sausage (cut into one inch slices)
  • 1 yellow onion (chopped)
  • 1 Green bell pepper (chopped)
  • 3 Ribs of celery (chopped)
  • 1 28 oz.can Tomatoes with juice (diced)
  • 4 cloves garlic (chopped)
  • 1 cup Chicken broth
  • 1 teaspoon Dried thyme
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 1 tsp Cayenne pepper
  • 1 tsp Tabasco (or other hot sauce)
  • 1 lb Shrimp (large, (peeled, deveined, and without tails)
  • 1/2 tsp Salt
  • 1/2 tsp Ground black pepper
  • 2 tbs Chopped parsley
  • Green onions (diced)

Instructions

  1. Combine all ingredients except for the shrimp and parsley into a crockpot. Cook on low for 6 – 7 hours, until chicken is done.
  2. Add the shrimp and parsley. Cook on high for 30 – 60 minutes, until shrimp are done.
  3. Serve in bowls and top with green onions to taste.
