Everyday Protein Pancakes

Ingredients

  • 5 scoops Cellucor Vanilla protein powder (paleoso)
  • 5 tbsp Coconut flour
  • 2 tsp Baking powder
  • 1 Very ripe banana
  • 2 Whole eggs
  • 6 Egg whites
  • 3/4 c Unsweetened almond milk
  • tsp Pure vanilla extract
  • ¼ tsp Nutmeg
  • Pinch of sea salt
  • Stevia (optional, to taste)
  • Non-stick oil or spray of your choice

Instructions

  1. First, microwave the peeled banana for 30 seconds. I find this helps soften it as well as make it a bit juicier. Mash banana with a fork.
  2. Next, heat a large skillet on medium and add your preferred non-stick oil/spray.
  3. Combine all the ingredients in a large mixing bowl.
  4. Pour batter onto skillet and cook pancakes for about 1-1.5 minutes each side until golden and fuly cooked.
  5. Once they cool, separate each pancake with a small piece of parchment paper and put into a large baggie in the freezer.
  6. To reheat, either pop them in the microwave for a minute or try toasting them. Top you’re your favorite topping and ENJOY!
