Holiday Party App: Creamy Pesto Cashew Dip

Ingredients

  • 2 cups Raw cashew
  • 1/4 cup olive oil
  • 1 bunch Fresh basil leaves
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 clove garlic
  • 1 Juice of lemon
  • Sliced veggies (such as cucumbers, peppers, or carrots; for serving)

Instructions

  1. Put the cashews in a large bowl and cover with cold water.
  2. et soak for 4 to 6 hours, adding water if necessary to make sure they are covered. Drain.
  3. Put the basil, garlic, and lemon juice in a blender or food processor and puree.
  4. Add the soaked cashews and blend until creamy.
  5. Slowly drizzle in the olive oil and continue processing until creamy.
  6. Season with salt and pepper and serve with sliced veggies.
