Ham and Egg Cup

  • 6 slices Uncured ham
  • 6 Eggs
  • 1 tsp Crushed red pepper flake
  • 1/2 tsp Chili powder
  • 1 tsp Cumin
  • Sea Salt and Black Pepper (to taste)


  1. Preheat the oven to 350 degrees F.
  2. Lightly coat a muffin tin with coconut oil.
  3. Place 1 slices of ham in each muffin cup so its securely in the cup with the edges evenly above the sides of the cup.
  4. Crack 1 egg into each ham cup.
  5. In a small bowl, mix together the spices and then evenly sprinkle on top of each egg.
  6. Place in the preheated oven.
  7. Cook for 20 minutes or until the eggs reach desired doneness.
  8. Season with salt and pepper.
  9. Enjoy!
