Healthy Root Vegetable Chips

These easy root vegetable chips are crispy and crunchy, but much more nutritious than store bought chips. You can season them with anything you like, from a simple salt and pepper blend to curry or dried herbs. Use a mandolin slicer to get thin, even slices. You can fry them in any high heat oil, but lard will give them the most flavor.

Ingredients

  • 1 golden beet
  • 1 large carrot
  • 1 parsnip
  • 1 turnip
  • 1 sweet potato
  • 1 cup lard or other Paleo friendly oil
  • Seasoning of your choice

Instructions

  1. Scrub the veggies and pat dry. Using a mandolin, slice them as thin as you can, making sure all the slices are even.
  2. Heat the lard or oil in a pot until it reaches 375 degrees F.
  3. Carefully fry the chips in batches, being careful not to overcrowd the pan. Drain on paper towels, and sprinkle seasoning of your choice over them.
  4. Let cool before enjoying.
