Carrot Cake Bites

With no cooking required, these bite sized treats give you something sweet after a meal without the heaviness that comes from traditional carrot cake.

Ingredients

  • 2 carrots diced
  • 1 cup chopped dates
  • 2 cups walnuts
  • 1 cup unsweetened coconut flakes
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond butter
  • 1/2 teaspoon sea salt

Instructions

  1. Put all of the ingredients in a food processor and pulse until well combined. Line a baking sheet with parchment paper.
  2. Using a cookie scoop, scoop rounded balls onto the sheet pan. Roll into tight balls, and refrigerate for about an hour before serving.
  3. Store remaining balls in an airtight container in the fridge.
