Curried Carrot Fries

These make a delicious addition to bunless burgers, Paleo wraps, or just as a quick and easy snack when you’re craving unhealthy fries.

  • 4 large carrots
  • 1 teaspoon curry powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon coconut oil melted
  • Chopped cilantro


  1. Preheat oven to 425 degrees Line a baking sheet with parchment paper.
  2. Peel and cut the carrots into sticks about 3 inches long and 1/4 inch thick. Toss with the curry powder, salt, and oil.
  3. Lay on the baking sheet in an even layer. Bake for 20-25 minutes, until carrots are crisp and lightly browned. Remove and sprinkle with the cilantro.
  4. Serve immediately.
