  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion diced
  • 1 pound chicken breasts cubed
  • 2 tablespoons coriander
  • 2 teaspoons cumin
  • 1/2 teaspoon cardamom
  • 2 cloves garlic minced
  • 1 tablespoon fresh grated ginger
  • 4 tablespoons tomato paste
  • 1 cup coconut milk
  • Juice of 1 lime
  • Sea salt and fresh ground pepper to taste
  • Chopped cilantro
  • Cauliflower rice for serving


  1. Heat the butter and oil in a deep, heavy pan over medium high heat. Add the onion and cook until soft. Add the chicken, cook until browned and add spices, garlic and ginger. Cook for another minute.
  2. Add the tomato paste and coconut milk, and simmer for 20 minutes. Stir in the lime juice, season to taste with salt and pepper, and add a handful of chopped cilantro.
  3. Serve over the cauliflower rice.
